A new study of Great Lakes boat captains over 15 years has found a correlation between the chemical DDE and diabetes. Those who ate more fish had more DDE in their blood and were at greater risk of developing diabetes, according to the findings. An earlier study involving 8,000 people across the United States also linked pollutants to diabetes, but how DDE specifically may lead to diabetes remains unknown. DDE accumulates in the fat and skin of fish, so trimming the fish's belly fat and then allowing the fat to drip off during cooking can reduce toxin intake. The new study is published in the journal Environmental Heath Perspectives.
