Eggs in Spicy Tomato Sauce

(great for breakfast or light dinner)

Finely chop 4 garlic cloves and 1 large onoin.  Heat 2 tbsp olive oil in large heavy-based pan, add garlic and onion and cook on low heat, stirring for 1-2min.  Add a tocan of chopped tomatoes and 1cup water to pan and stir to combine.  Add 2tsp sugar (or packet of splenda), 1tsp cried chilli flakes, 2tbsp red wine vinegar and stir to combine.  Cook 4-5min.  Make 6 same size hollows in tomato mixture, then break an egg into each hollow.  cover and cook 3-4min or until eggs are cooked to your liking.
