Low Carb Sweet and Sour Chicken
Ingredients:
4 chicken breasts
2 tablespoons oil
salt and pepper
Sauce:
1/2 cup crained and rinsed soybeans
2 tbsp butter
3/4 cup finely chopped onion
1 cup canned, crushed tomatoes
1 cup stock
1 cup dry white wine
1 tsp hickory smoke liquid
1/2 tsp garlic powder
salt and pepper
4 packets Splenda
Method:
Preheat oven to 160degC. Butter mid size casserole dish. Mash soybeans in processor.
To Make Sauce: heat small frypan over medium heat. Add butter, saute onions lightly. Put onion and all other ingredients in a saucepan. Simmer sauce gently for ~10 or 15 minutes while you prepare and brown the chicken.
Cut each breast into small pieces. Heat large frypan over medium heat. Add oil. Add chicken and brown quickly on both sides. Sprinkle chicken with salt and pepper and transfer to casserole dish. Pour sauce over chicken. Dot with butter. Bake uncovered for ~1h. Serve immediately with steamed veges of your choice.
